1 Pint Grape tomatoes halved or chopped Roma tomatoes
Loaf Country Bread
1 Tablespoon Lemon Juice
Cup Olive Oil
4 Oz Dill minced
To make croutons, preheat oven to 350. Cut bread into 1 inch squares. Toss with olive oil and spread out in a single layer on a baking sheet. Bake for 20 minutes or until brown and crispy. Allow to cool. In a large bowl, toss together cucumber, tomatoes, onion and croutons. Whisk together lemon juice and olive oil. Pour dressing over vegetables and croutons. Add chopped dill and season with salt and pepper. Serve room temperature or cold.
