Fennel, Pear and Blue Cheese Flatbread

Ingredients (4 Servings)

  • 1 Whole Pizza dough at room temperature
  • 2 Whole Fennel Bulb trimmed and sliced
  • 1 Large Onion sliced
  • 4 Tablespoons Olive Oil
  • 1 Whole Pear cored and sliced thinly
  • 3 Oz Mozzarella grated
  • 1 Oz Blue Cheese crumbled
  • 1 Pinch Red Pepper Flakes

Preparation

  • Toss the fennel pieces with olive oil, salt and pepper and roast them in a 400 degree oven for 20 minutes. Meanwhile, saute the onion slices in olive oil until they begin to soften and caramelize. Spread the pizza dough in a pizza pan. Drizzle with olive oil. Spread the roasted fennel and onion slices on top of the pizza dough. Top with the grated mozzarella and crumbled blue cheese. Arrange the sliced pear on top of the cheese. Bake at 475 for ten minutes. Top the cooked pizza with a pinch of red pepper flakes and some chopped reserved fennel fronds.
