Whisk together orange juice, grapefruit juice, grapefruit zest, vodka, chopped shallot and mint. Slowly add oil in a steady stream while continuing to whisk. Place chicken breasts in a shallow dish. Pour marinade over the chicken. Cover tightly and refrigerate for at least 4 hours up to overnight. Turn breasts several times if possible. To cook chicken, remove from marinade. Preheat oven to 375. Roast chicken on a baking sheet or in a shallow pan until cooked through, about 45 minutes.
