Greek-style Farro Salad

Ingredients (4 Servings)

  • 1 Cup Farro
  • 1 Whole Cucumber diced
  • 4 Whole Roma Tomatoes diced
  • 1 Whole Red onion sliced
  • 8 Oz Feta
  • 3 Oz Basil Leaves cut into a chiffonade
  • 2 Tablespoons Lemon Juice freshly squeezed
  • 3 Tablespoons Olive Oil

Preparation

  • To cook farro, place it in a large sauce pan and cover with 4 cups of cold water. Bring to a boil, and then lower the heat and simmer until farro is tender, about 30 minutes. While farro is cooking, chop the tomatoes and cucumber into a dice and slice the onion into strips. Combine the vegetables into a large serving bowl. When the farro is cooked, drain it and add it to the serving bowl. Whisk together the olive oil and lemon juice and add the dressing to the farro and vegetables while the farro is still warm. Toss to combine. Crumble the feta over the farro, and the basil and season well with salt and pepper.
