Ingredients (4 Servings)

  • 1 Tablespoon Olive Oil
  • 1 14 Cups Onion Thinly Sliced
  • 1 Grany Smith Apple Thinly Sliced
  • Salt to taste
  • Black Pepper to taste
  • 4 Slices Cheddar Cheese blue, if possible
  • 8 Slices Filone Bread ¼ inch thick, sliced on bias
  • Butter as needed, for spreading

Preparation

  • To Prepare the Filling:
  • Heat olive oil in a large sauce pan over medium low heat. Add onions and cook for about 20-30 minutes or until onions are soft and caramelized. Make sure to stir the onions every few minutes. If onions start to burn, lower heat and add a teaspoon of water.
  • Once the onions are caramelized, add apples and sauté for 4-5 minutes until slightly al dente.
  • To Assemble:
  • Heat a griddle over medium heat. Spread butter on one side of each slice of bread. Atop one piece of bread, add a slice of cheese, 1 tablespoon of onions and a 2-3 slices of apple. Then top with remaining slice of bread. Toast sandwich on each side for 3-4 minutes or until bread is golden brown and cheese is melted
