Mango Salsa

This sweet-hot mango salsa makes a great topping for fish or chicken. It can even be an elegant dip for chips!

Ingredients (2 Servings)

  • 2 Whole Mango
  • 2 Whole Roma Tomatoes
  • 1 Whole Red onion
  • 1 Whole Limes
  • 1 Bunch Cilantro
  • 1 Pinch Cayenne pepper

Preparation

  • Peel mango and cut two slices off the side around the pit. Dice finely. Slice open the Roma tomatoes and remove the seeds. Dice the tomatoes. Cut the red onion in a small dice. Combine mango, onion and tomatoes in a large bowl. Zest and juice the lime and add to the bowl. Chop a handful of cilantro and add to the bowl. Add a pinch of cayenne pepper, salt and pepper to taste and toss together. Chill for a few hours prior to serving.
