This cool and refreshing salad has a taste of the Greek Isles.

INGREDIENTS - 4 servings
1 Whole Cucumber seedless, chopped
1 Whole Red onion diced
2 Whole Roma Tomatoes diced
4 Oz Greek yogurt plain
1 Whole Lemon
1 Bunch Chives minced
Toss chopped cucumber, red onion, and Roma tomatoes together in a large serving bowl. Zest lemon and add lemon zest to the vegetables. In a smaller bowl, whisk together the Greek yogurt and the juice from the lemon. Season with chopped chives, salt and pepper. Pour yogurt mixture over the vegetables and toss gently to combine. Serve cold.
