INGREDIENTS - 6 servings
  • 3 12 lb Beef Short Ribs cut into 3 inch pieces
  • 1 Yellow Onion Chopped
  • 1 Cup Carrot Chopped
  • 1 Cup Celery Chopped
  • 2 Cloves Garlic Chopped
  • 1 sprig Rosemary
  • 4 sprig Thyme
  • 4 sprig Parsley Chopped
  • Sea Salt
  • Black Pepper Freshly ground
  • 2 Beer, 2 standard size bottles of dark beer like Shiner etc.
  • 2 Cups Beef Broth
  • 3 Cups Grits
  • Combine all ingredients in a slow cooker. Turn on low heat and cook for 12 hours or overnight.
  • In the morning, place in refrigerator. Before serving, skim fat from surface and reheat.
  • Serve with cheese grits.
