Chocolate Raspberry custards with Brazilian kisses

Ingredients (6 Servings)

  • 2 Cups Heavy Whipping Cream
  • 1 Cup Milk
  • 1 Teaspoon Pure Vanilla Extract
  • 2 Eggs
  • 3 Egg Yolks
  • 14 Cup Superfine Sugar
  • 1 Jar Chocolate Raspberry Jam
  • 1 Packet Brazilian Kisses

Preparation

  • Preheat oven 300 degrees Fahrenheit
  • In a saucepan, place cream, milk and vanilla extract over high heat till the mixture comes to a boil. Remove from heat and set aside.
  • In a large bowl, whisk eggs and eggs yolks until well combined. Gradually add the hot cream mixture to the egg mixture and whisk till combined
  • Strain custard if there are lumps before transferring to individual ramekins with custard mixture.
  • Fill a large oven proof dish with 1 inch of water to make a bain marie. Place ramekins in the water bath, taking care not to get any water into the custard
  • Bake for an hour and 10 minutes, until custard sets. Remove from water bath and let cool.
  • Spoon in chocolate raspberry jam as desired and top each ramekin with Brazilian kisses cookies.
  • Custards may be made a day ahead and refrigerated.
