CHOCOLATE RASPBERRY CUSTARDS WITH BRAZILIAN KISSES

INGREDIENTS - 6 servings
2 Cups Heavy Whipping Cream
1 Cup Milk
1 Teaspoon Pure Vanilla Extract
3 Egg Yolks
Cup Superfine Sugar
1 Jar Chocolate Raspberry Jam
1 Packet Brazilian Kisses
Preheat oven 300 degrees Fahrenheit
In a saucepan, place cream, milk and vanilla extract over high heat till the mixture comes to a boil. Remove from heat and set aside.
In a large bowl, whisk eggs and eggs yolks until well combined. Gradually add the hot cream mixture to the egg mixture and whisk till combined
Strain custard if there are lumps before transferring to individual ramekins with custard mixture.
Fill a large oven proof dish with 1 inch of water to make a bain marie. Place ramekins in the water bath, taking care not to get any water into the custard
Bake for an hour and 10 minutes, until custard sets. Remove from water bath and let cool.
Spoon in chocolate raspberry jam as desired and top each ramekin with Brazilian kisses cookies.
Custards may be made a day ahead and refrigerated.
