FRIED EGGS WITH A HONEY-BALSAMIC PAN SAUCE

Stephanie grew up in a meat & potatoes world until she was exposed to the culinary world. She ran a successful wedding cake business in Austin until moving to Dallas. Her cooking is inspired by French & Italian cuisine and by local farmers.

INGREDIENTS - 2 servings
  • 4 Tablespoons Butter - divided
  • 4 Eggs - divided
  • 14 Cup Balsamic Vinegar
  • 12 Teaspoon Orange Blossom Honey - Savvannah Bee Company, preferably
  • Sea Salt
  • Black Pepper
  • 4 Slices Sourdough Round
  • 12 lb Mixed Greens
PREPARATION
  • Preheat a medium, non-stick pan over medium heat for 3 minutes. Add 2 teaspoons of butter and break two eggs into the pan. Fry 3-6 minutes (to desired doneness), flipping over if desired.
  • Remove from the pan and place on a warm platter, lightly covered to stay warm. Return pan to burner and repeat again with the next two eggs. Remove those to the warm platter and return pan to the burner once again. Pour in the balsamic vinegar and honey and boil until reduced to a thick syrup, approximately 2 minutes.
  • On two separate plates, place some mixed greens, top with two fried eggs and pour a spoonful of the balsamic sauce over the eggs. Season with salt and pepper to taste and serve with freshly toasted sourdough bread.
