INGREDIENTS - 4 servings
  • 2 Chicken Breast boneless, skinless, divided in 2 each to make 4 portions
  • 1 Teaspoon Sea Salt
  • 1 Teaspoon Black Pepper
  • 2 Tablespoons Olive Oil
  • 1 Package Linguine
  • 4 Oz Fontina can use Mozzarella instead
  • 1 Jar Arrabiata Sauce or another smooth tomato pasta sauce
  • 2 Oz Parmesan cheese
  • 2 Tablespoons Parsley optiona - to your Kids' taste
PREPARATION
  • Season the chicken with salt and pepper. In a large sauté pan over medium-high heat, add the olive oil and the chicken and cook until browned on both sides and cooked through, about 10-15 minutes depending on the thickness of your chicken. Top each piece of chicken with the Fontina or Mozzarella and allow the cheese to melt and set aside.
  • Meanwhile, bring a large pot of water to a boil over high heat. Generously salt the boiling water. Cook the pasta, stirring occasionally to prevent sticking, until al dente, according to the package instructions. Drain the pasta.
  • In a large saucepan, warm the pasta sauce over medium heat.
  • Add the drained pasta to the sauce and toss to combine. Serve four portions of pasta and top each with one piece of chicken. Garnish with freshly grated Parmigiano-Reggiano and parsley. Serve immediately.
