The Chilean Sea Bass, or Patagonian toothfish, is a fish found in the cold, temperate waters around most sub-Antarctic islands. The average weight of a commercially caught Patagonian toothfish is 9–10 kg (20–22 lb) and they are thought to live up to 50 years. Because of its white meat appeal, Chilean Sea Bass has recently gained popularity in the market.
