Strawberry Yogurt Parfait

These parfaits can serve as a healthy dessert or an indulgent breakfast treat. Perfect for Valentine's Day!

INGREDIENTS - 4 servings
  • 16 Oz Greek yogurt honey or vanilla flavored
  • 2 Pints strawberries hulled and halved
  • 1 Cup cream, chilled
  • 2 Tablespoons sugar
  • 1 Teaspoon vanilla extract
  • 4 Sprigs mint leaves
  • 3 Tablespoons Grand Marnier or orange juice if you prefer
  • Toss strawberries with 1 TB of sugar and the Grand Marnier or orange juice in a large bowl. Cover and place in the refrigerator.
  • Whip cream in a stand or hand-held mixer until soft peaks form.
  • Add 1 TB of sugar and the vanilla extract and beat again until fully whipped. (If not using whipped cream right away, cover and refrigerate.)
  • To make the parfaits, alternate layers of yogurt and strawberries in a tall glass or champagne flute. Top with a dollop of whipped cream and a mint leaf.
