INGREDIENTS - 6 servings
lb beef short ribs cut into 3-inch pieces
1 yellow onion, chopped
1 Cup carrot(s), chopped
1 Cup celery, chopped
2 Cloves garlic, chopped
1 sprig rosemary
4 sprig thyme
4 sprig parsley, chopped
black pepper freshly ground
2 beer, 2 standard size bottles of dark beer like Shiner etc.
2 Cups beef broth
3 Cups grits
Combine all ingredients in a slow cooker. Turn on low heat and cook for 12 hours or overnight.
In the morning, place in refrigerator. Before serving, skim fat from surface and reheat.
Serve with cheese grits.
