INGREDIENTS - 4 servings
  • 3 Tablespoons olive oil
  • sea salt
  • black pepper
  • 2 lb cod or use Grouper as well
  • canola oil for frying
  • 1 Cup all-purpose flour
  • 2 egg(s), large
  • 2 Tablespoons whipping cream or milk
  • 1 Cup bread crumbs or use Panko
  • 2 Tablespoons mayonnaise
  • 1 Tablespoon Dijon mustard, Champagne Shallot Mustard or any Dijon
  • 3 Russet Potatoes

  • Preheat the oven to 425°.
  • Peel the potatoes and cut them lengthwise into sticks. Toss the potato sticks in a bowl with the olive oil, ½ teaspoon salt, and ¼ teaspoon pepper, or to taste. Arrange the potatoes in one layer on a baking sheet lined, preferably with a silicone pad.
  • Place in the oven and cook until the bottoms are nicely browned, about 10 minutes. Remove the potatoes from the oven, use a spatula or tongs to turn them, and continue cooking until the other side is browned, about 8-10 minutes longer. Remove from the oven and set aside.
  • While the potatoes are roasting, to make the fish, season both sides with salt and pepper and cut the cod or grouper crosswise into slices about 1 ½ inches thick.
  • In a large frying pan, pour in vegetable oil or olive oil until about 1/4-inch high in the pan. While the oil is heating, arrange a breading station next to the stove: Place the flour on a plate. Next to that, whisk the eggs with the cream in a wide bowl. Next put the breadcrumbs or panko on a plate.
  • One at a time, dredge the fish pieces in the flour, shaking off any excess, then dredge through the egg, and finally place on the bread crumbs, turning the fish so the crumbs stick to all sides. Place the fish in the pan and fry until golden on both sides, about 4 minutes per side, depending on how thick the fish is.
  • To make the sauce, in a small bowl combine the mayonnaise with 1 tablespoon of the mustard. Serve the fish and oven fries, accompanied by the sauce and a vegetable of your choice.
