LINGUINE WITH A HEALTHY CHICKEN PARMESAN
Chicken Pasta your kids would love

INGREDIENTS - 4 servings
2 chicken breast(s), boneless, skinless, divided in 2 each to make 4 portions
1 Teaspoon sea salt
1 Teaspoon black pepper
2 Tablespoons Olive oil
1 Package linguine
4 Oz Fontina cheese or use Mozzarella
1 Jar arrabiata sauce or another smooth tomato pasta sauce
2 Oz Parmesan cheese
2 Tablespoons parsley optiona - to your Kids' taste
Season the chicken with salt and pepper. In a large sauté pan over medium-high heat, add the olive oil and the chicken and cook until browned on both sides and cooked through, about 10-15 minutes depending on the thickness of your chicken. Top each piece of chicken with the Fontina or Mozzarella and allow the cheese to melt and set aside.
Meanwhile, bring a large pot of water to a boil over high heat. Generously salt the boiling water. Cook the pasta, stirring occasionally to prevent sticking, until al dente, according to the package instructions. Drain the pasta.
In a large saucepan, warm the pasta sauce over medium heat.
Add the drained pasta to the sauce and toss to combine. Serve four portions of pasta and top each with one piece of chicken. Garnish with freshly grated Parmigiano-Reggiano and parsley. Serve immediately.
